Memories of Ireland

Hearts filled to the brim with love and respect
Smiling eyes to welcome and connect.
A wild sense of humor that would make a cat laugh
Plus a pinch of ridicule to add to the spark.
Forty or is it eighty shades of green
Rain and drizzle never before seen.
Pubs that stay open all through the night
Driving on the left or was it the right.
When we’ve had one or two too many this is how we talk
Would you give me that instead of pass me the salt.
Mass in Latin or was it Cantonese
What difference does it make sure we were on our knees.
Cups of tea by the dozen a rasher with egg
Black or brown pudding and a slice of Nellie’s soda bread.
A moaner is described by Nellie like this
She always has a cow in the ditch.

Nelly's Soda Bread...
14 ozs Odlums white flour..2 ozs Odlums bran..1 heaped teasp. baking soda..pinch of salt..
300 mls/ half pint buttermilk..teasp. butter (keeps longer)

Sieve flour & baking soda, add bran and salt. Add butter and buttermilk.
Knead lightly, form a round, put a cross on top (helps it to rise nicely and allows you to break into sections to slice).
Grease and flour a baking tray. Bake for 45 mts in 200C/400F/Gas mark 6 on the middle shelf.
Put foil on top if it is browning too much.

If you don't have buttermilk, add 1 tablesp. vinegar in milk and leave for 10 mins.

400 sounds very hot ! Suggest 180C/350F/Gas mark 5. Good luck !!
